"Himmlische" Pralines and Cakes with Ruby Chocolate
Just in time for Valentine's Day, we're combining our love of chocolate and our love of craftsmanship in new, limited-edition creations made with Ruby chocolate.
What makes Ruby chocolate so special?
Ruby chocolate is arguably the biggest innovation in the chocolate world in recent years. Years of work went into refining rare cocoa beans until they could be turned into a fruity chocolate. The Ruby cocoa bean is naturally pink in color. Pink-colored cocoa butter can therefore be extracted from the cocoa beans, which can then be processed into pink chocolate entirely without the addition of colorants.
The epitome of craftsmanship
Our chocolatiers spent several months tinkering with our Ruby creations. In its pure form, Ruby chocolate is very sensitive and fades quickly when exposed to too much light and humidity. This is not a problem with our new Ruby Himmlische Cake due to its quick consumption-time. It got a little trickier for our chocolatiers when we all wished to throw the Himmlische Praline into a pink robe. But here, too, they triumphed and created a praline that delights! A little note from us: to enjoy the Ruby Himmlische in its full glory, the praline should be consumed within six weeks. After that, it will not go bad, but may eventually fade a bit.
Small, fine portions
For the time being, we are offering the Ruby Himmlische only in small quantities and in combination with our classic and Marc de Champagne praline. But maybe we are already tinkering with a more long-term addition to our assortment ;)
